Air Fried Salmon Croquettes with Cajun Lemon Dill Sauce

Having WLS doesn't mean your food needs to be flavorless and boring! Since we can only eat so much at a time we might as well make the most of what we are eating? Thankfully we have our friend Ked to prove this to be true. Last night he shared another awesome recipe with us on Cooking with Ked. This is how you make air fried salmon croquettes. 

Ingredients 

  • Salmon Croquettes
    • 1 pound fresh salmon
    • 1/2 cup panko bread crumbs
    • 1/2 cup diced onions
    • 1/2 cup diced bell peppers
    • 1 large egg whisked
    • 1 tablespoon Worcestershire sauce
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1 teaspoon Cajun seasoning
    • 1 teaspoon minced garlic
    • 1/2 cup  mayonnaise
    • Nonstick olive oil spray
    • 1 teaspoon parsley
    • 1 teaspoon basil
    • 1 1/2 cups of mayonnaise
    • Nonstick olive oil spray
    • 1 teaspoon parsley
    • 1 teaspoon basil
    • 1 cup of mayonnaise
    • Juice and zest of one lemon
    • 1 tablespoon whole grain mustard
    • 1 teaspoon cajun seasoning
    • 1/4 cup of chopped fresh dill

Instructions

  1. First dice salmon into small chunks.
  2. In a large bowl combine salmon, egg, panko, onions, bell peppers, Worcestershire sauce, onion powder, garlic powder, parsley, basil, Cajun seasoning, minced garlic, and 1/2 cup of mayonnaise together. Mix well to combine.
  3. Form 6 to 8 patties.
  4. Place patties in air fryer basket and spray with nonstick olive oil spray.
  5. Cook patties at 400 degrees for 8 minutes.
  6. Flip patties over and spray again and cook for an additional 4 to 7 minutes until golden brown.
  7. Mix 1 cup of mayonnaise, juice and zest of 1 lemon, whole grain mustard, cajun seasoning, and 1/4 cup of chopped fresh dill and enjoy
